How to make a flourless orange and almond cake

Orange and almond flourless cakeThis flourless orange and almond cake was one of the favorite cakes among our customers in the cafe for years.  It is so moist and tasty and super easy to make. The smell of citrus alone, as you cook the oranges is enough to get your taste buds cranked up a gear. The recipe has been tried and tested many many times so it’s pretty much guaranteed to work.

Oranges – luckily oranges are available in most places all year round.  Valencia are probably the best to use if you can get them, Seville for a slightly tarter cake.  Reality is, any orange will still taste great, with organic oranges even better.

To prepare the oranges, place them into a saucepan of cold water and bring to boil. When they boil tip the water out and add cold again. Bring to boil and repeat again.  They should be boiled 3 times then cooled by adding cold water again.  This removes the tart taste of the orange skins.  When cool blend the oranges skin and all. They are now ready to go.

Moist delicious gluten free flourless orange cake

IngredientsCombine ingredients orange cake

2 oranges ( prepared as above)
400g ground almond meal
300g sugar
4 eggs
1/2 teaspoon baking powder

How to

Combine the dry ingredients in a bowl. Add blended oranges. Lightly whisk eggs then add them to the mix. Combine all then transfer to a lined tin. That’s it – so easy.
Cook on 150C for 40 minutes.

Finished cakeOnce the cake is cooked and cooled heat up some marmalade or apricot jam and brush over the orange and almond cake with a food brush. Sprinkle with shaved almonds or slices or glazed oranges.

PERFECT – moist, gluten free, flourless, orange and almond cake.
