These easy to make healthy vegan snacks are gluten free, egg free and dairy free. They are the perfect snack with no added sugar and stuffed with the goodness of nuts and coconut. So delicious and so nutritious!
This recipe makes approx 25 small balls
1 Cup pitted dates (soaked and dried)
1/2 cup walnuts
1/2 cup almonds
1/4 cup vegan cocoa powder or pure cocao powder
1/4 cup shredded coconut
1 tsp vanilla
1 TBSP water
Add walnuts and almonds in a food processor and process to a chunky meal (not powder). Add the dates and pulse until they are roughly broken down.
Put this mixture into a bowl and add the rest of the ingredients and mix together.
Roll mixture into balls and roll in coconut.
Store in the fridge or freezer until set.
